Daucus carota sativa, also known as the carrot, is a root vegetable that is usually orange in color. The most commonly eaten part of the carrot is the taproot, the large, central, and dominant root from which other roots sprout laterally. The roots contain high quantities of alpha- and beta-carotene, and are a good source of vitamin K and vitamin B6.
